    Put the bacon on a plate, and put the onion into the vacated pan. We give it to fry in the same oil (5-10 minutes), making sure that the onions do not burn.

    While everything is cooking, peel the potatoes and chop them into small slices.

    Pour the potato slices into a saucepan to the onion, fill with water so that it slightly covers the potatoes.

    Bring the soup to a boil, then pour a glass of milk into it.

    Rub the cheese on a fine grater.

    And now we slightly cool the whole mass of the finished soup and transfer it to a blender, add the cheese and grind it thoroughly until smooth. We return to the saucepan and, if the soup seems too thick, add a little boiling water.

    Salt and pepper. Important: when grinding pepper, we try not to turn it into dust, it is much more interesting when small fragrant pieces of pepper come across in the soup.

    Don't forget to add a tablespoon of fried bacon to each plate.

    You can decorate the mashed potato soup with parsley.

    ON A NOTE. It is not forbidden to add a couple of tablespoons of fat sour cream to this soup when serving or whipping with a blender. Instead of sour cream, you can use thick Greek yogurt - a slight sourness will not hurt the soup at all.

    However, it seemed to me that my mashed potato soup without sour cream was high enough in calories, and I did not add anything.

Although in early childhood our mothers often cooked them for us, and such soups were an integral part of our first adult menu. And mashed soups are also recommended for dietary meals. They are made from just about anything, and many have their own ways of making them. And one thing unites them: at the end they are necessarily frayed or mashed.

I suggest you cook delicious and tender mashed potato soup which can be done with chicken or mushrooms, and serve with homemade crackers.

The secret of making mashed potatoes with mushrooms and croutons

  1. Let's start cooking the soup by peeling the potatoes, onions and mushrooms.

    I often cook with champignons, but you can also cook with forest mushrooms, which must be boiled beforehand. You can also use frozen mushrooms. In this case, they are thawed on a sieve so that all the liquid is glass.

  2. Cut the potatoes into arbitrary pieces. Put the potatoes in a saucepan and fill them with water so that they cover the potatoes a little. We put to cook. After boiling, remove the foam and reduce the heat.
  3. Cut the onion into small pieces or chop it into half rings. Lightly fry it in a pan, pouring a little vegetable oil on it.
  4. During this time, randomly chop the mushrooms. They will purée anyway. You can leave two or three mushrooms for decoration.
  5. Add the mushrooms to the pan to the onion and fry until light brown, stirring occasionally. When the liquid evaporates, add the butter. Optionally, add a couple of minced chives at the end.
  6. When the potatoes are cooked, add the mushrooms and onions and boil for another five minutes.
  7. Remove from the stove, take a blender and use it to turn the entire contents of the pan into a homogeneous puree.
  8. Add salt, pepper and, if desired, a little nutmeg and herbs. We mix.
  9. Pour cream or milk into mashed potatoes. Mix again, put on the stove and boil for about another five minutes.

  10. While the soup is being prepared, we take slices of white bread or loaf and cut off the crust from them. Cut into cubes and dry. You can do this in a dry skillet or in the oven by placing the bread cubes on a paper-lined baking sheet.
  11. If you left the mushrooms, then cut them into thin slices and fry on both sides. Those who like mushrooms raw may not do this.
  12. The soup is boiled, the croutons are ready, we can fill the plates and decorate with mushroom plates, crackers and herbs.

Another option: mashed potato soup with chicken

This soup can be cooked and with Chiken... To do this, boil the chicken breast for 35-40 minutes. We take it out of the pan and put the potatoes in the broth. Cut the breast itself and put it back in the pan. Farther we do everything according to the recipe and puree everything with the chicken.

I will cook mashed potato soup like in kindergarten, without following the strict technologies of kindergarten, because I want to shorten the cooking time, and modern gadgets now greatly facilitate some of the cooking processes.

The soup is called potato soup, but due to the large amount of carrots in it, the color is quite saturated and orange.

The composition contains 20 grams of flour and butter - this is one large tablespoon each.

Cut the carrots into washers about 1 centimeter, and the potatoes into large cubes. I cut a large tuber into 8 pieces.



Pour 50 grams of water (or broth) and set aside. You will need water to make the white sauce.

Boil milk.
For the white sauce, lightly fry the flour in a skillet and mix with the previously set aside water.

Remove the pan from the heat and purée until smooth with a hand blender.

Finally add the white sauce, butter and half of the milk.

If you don't have a hand blender, you can puree the soup in a simple blender, or grind the vegetables through a sieve.



Return the saucepan to the heat and bring the soup to a boil again.

When serving, add a little milk, diluting the soup to the desired thickness.

I will add on my own that I would exclude white sauce from this recipe. Flour is needed to make it thicker, but the soup is already thick, you can just add a little less water or milk.
