How to cook:

1. Rinse your tongue, pour boiling water over it, descale it, pour in soy sauce, add star anise and cook over low heat for a little over an hour until soft.

2. Pour the finished tongue with ice water, peel it and cut it into cubes while hot. Add onion sliced ​​lengthwise. Add a spoonful of soy sauce and stir. Leave to cool

3. Wash and dry vegetables and herbs. Cut the cucumber into thick strips, and the pepper into thin strips. Coarsely chop parsley or cilantro. Flatten and finely chop the garlic.

4. Place vegetables on your tongue and stir. Separately mix the last spoonful of sauce, vinegar and sesame oil. Pour over the salad and stir. Let stand for 15 minutes. Serve sprinkled with toasted sesame seeds.

  1. Prepare all ingredients for tongue salad, Chinese style. First boil the beef tongue until tender in water, adding 2-3 tbsp. soy sauce. Remove skin from boiled tongue and cool.
  2. Cut the warm beef tongue into cubes, add red onion, cut into thin half rings. Pour 1-2 tbsp. soy sauce, stir and leave to cool.
  3. Cut the cucumbers into large cubes, removing thick peel if necessary. Red sweet pepper also cut into cubes, after removing the seeds. Crush the garlic with a knife and chop finely.
  4. Place the vegetables in a bowl next to your tongue. Add coarsely chopped parsley or cilantro.
  5. Separately, mix the remaining soy sauce with sesame oil, seasoning and salt, if necessary.
  6. Place salad with tongue and vegetables on a serving plate in a heap. Top the salad with 1 tsp. the resulting sauce.
  7. Sprinkle Chinese tongue salad with sesame seeds.

Serve the salad chilled.

I can't say that I'm a fan of Asian cuisine. Of course, when the fashion for sushi bars reached my surroundings, my friends and I often visited these establishments. But I never learned to understand the taste of these dishes, and little by little I began to refuse parties where such food is a feature.
And so, when a friend of mine decided to open a small establishment in our city specializing in Asian cuisine, I even began to dissuade him, because I did not believe in the success of this business. But, to my great joy, I was very mistaken, because my friend turned out to be an excellent cook and a good organizer. As a result of many months of painstaking work, a small cozy room was found in the city center, repairs were made and minimal equipment was purchased. Then the restaurant opened in test mode, when visitors tried new dishes and gave their ratings, as well as expressed wishes.
Now this is my favorite meeting place with my girlfriends, and no matter what we order, they always bring us a dish from the chef - his signature tongue salad with Chinese cucumber sauce. It's so delicious, I'll tell you that I asked for the recipe and am trying to cook it at home. Of course, despite observing all the proportions of such a dish as the chef prepares it, I can’t do it, but I try!
It is important to cook the tongue correctly, for this I cook it with the addition of spices and soy sauce, and when it is peeled and chopped, I mix it with chopped onions and also pour the sauce over it.
The vegetable base of the dish is fresh cucumbers and salad pepper, which I mix with a bunch of herbs and chopped garlic. And after I mix the tongue with vegetables, I also add original sauce and let it sit for at least 15 minutes to marinate.

Ingredients:

- pig tongue – 1 pc.,
- fresh cucumber – 1 pc.,
- salad pepper – 1 pc.,
- onion – 1 pc.,
- parsley or cilantro – 0.5 bunch,
- sesame seed – 1 tbsp. – at will,
- soy sauce – 3 tbsp. (in broth) and 2 tbsp. (in salad)

First, let's study the language. To do this, we clean fresh language from mucus, fill with hot water and add soy sauce, as well as spices and spices, to the pan. Cook the tongue until it is soft, about an hour.
Then quickly cool it in ice water and remove the white skin. While the tongue is hot, cut it into cubes.




Cut the peeled onion into slices, mix with the tongue and pour over soy sauce.




Cut the washed cucumber into large strips. You can cook another one like this.




Cut the salad pepper in half, remove the seeds and chop it.
We wash the greens and dry them, then chop them finely.
We pass the peeled garlic through a press or chop it.






Separately mix soy sauce and sesame oil, add a little vinegar.
Mix vegetables and tongue with onion. Add the resulting sauce and leave the dish to marinate for 15 minutes.
