Ingredients:

  • 500 g minced chicken (low-fat, because otherwise all the fat will melt out during baking);
  • 1 egg;
  • 1 small onion;
  • Salt, ground black pepper - to your taste;
  • 200 g of frozen vegetable mixture - more colorful! In the “Mexican Mix,” for example, there are bright green peas and asparagus, yellow corn, orange carrots, red beans... Beauty! And in the summer it’s even better - you can take fresh vegetables!

Instructions:


Boil the vegetable mixture for 3-5 minutes in salted water and drain in a colander. You can boil whole fresh vegetables and then cut them into cubes.






Season the minced meat with salt and pepper, add the egg and finely chopped onion, mix.




Add the vegetables to the minced meat, squeezing them lightly with your hand so that there is no excess moisture.




Mix again. The minced meat for the casserole is ready!




Let's grease the mold sunflower oil, if it is metal, but silicone ones, which are not used for the first time, do not need to be lubricated.



The casserole can be prepared in this form - then it will be like meat loaf

Place the minced meat in molds and place in a warm oven.



Or you can use it in small portioned muffin tins.

Cook for 35-40 minutes at 180-190C.

Chicken meat is considered dietary; it is recommended to give it to children as early as 10 months. The healthiest meat dishes for children are prepared from minced meat. You can take chicken, turkey and veal. It is desirable that the cutlets are soft and juicy. To do this, you can add various vegetables to the minced meat.

Not only cutlets or meatballs are made from minced meat. You can use it to make a casserole, navy-style pasta, and meatballs for soup. Let's consider several options.

Chicken cutlets with broccoli without breading and bread

For half a kilo of minced meat you need 150-200 grams of broccoli, one small onion and 1 egg.

Finely chop the chicken fillet. (You can take not only breasts, but also meat from chicken legs.) Divide the broccoli into florets, rinse and pour boiling water for 3-4 minutes. Peel the onion and finely chop.

Then place all ingredients, including the egg, in a mixer and grind. The minced meat should be runny. If it is too thick, add a few tablespoons of sour cream. Don't forget to add salt and pepper, sweet paprika.

Then heat the frying pan, pour in oil and spoon the cutlet mixture into the frying pan, like pancakes.

Fry on both sides for about 4-5 minutes.

When all the cutlets are ready, put everything in a frying pan or saucepan with a thick bottom, add a little water and simmer under the lid over low heat for about 15-20 minutes.

The cutlets turn out very soft and juicy.

Chicken meatballs with filling

Prepare minced chicken as in the previous recipe, but without adding broccoli. When frying, put a little minced meat in a frying pan, carefully level it with a spoon, then put the filling, and again minced chicken on top. Smooth out the edges again with a spoon. To prevent the meat from sticking to the spoon, moisten it with water.

For the filling you can use finely chopped and salted spinach, cabbage or chopped boiled eggs.

Fry on both sides until a crust appears, then simmer in sour cream sauce. under the lid on low heat for 20-30 minutes.

Minced chicken roll

This dish is often prepared in kindergartens. But there they often use boiled chicken meat, which is ground in a meat grinder. But also from raw minced meat it turns out excellent dish- tasty and healthy.

First, prepare the minced meat, add 1 onion per 500 grams, 1 egg, salt and fresh parsley and dill, if desired, and a couple of spoons of sour cream.

We prepare the filling separately, it all depends on taste preferences. You can stew cabbage, you can take broccoli, spinach. Or you can have canned green peas.

Grease a baking sheet with oil. Place half of the minced meat on food foil or film and level it out. We put the filling on top, and then the minced meat again. With wet hands, form a roll. Place on a baking sheet.

If you don’t want to mess around, you can simply mix all the ingredients.

Bake in the oven at 180 degrees for 40 minutes.

WITH minced chicken- great way to cook meat dish along with a side dish: nourishing, tasty, simple, it takes little time to prepare. Various vegetables They combine perfectly in this dish both with each other and with minced chicken.

The casserole turns out not only juicy and aromatic, but also beautiful; on the plate it looks almost like a piece of cake. It is eaten with pleasure by both adults and children, and even those who are on a diet: the dish is almost dietary, low-fat, not fried, not spicy.

Need to:

  • Minced chicken – 1 kilogram (it’s up to you: buy ready-made or grind it yourself!)
  • Onion – 1 large onion
  • Fresh tomatoes – 4 medium-sized pieces
  • Sweet pepper (“Bulgarian”) – 2 pieces (preferably red or yellow)
  • Potatoes – 3 large potatoes
  • Sour cream – 5-6 tablespoons
  • Vegetable oil – 2 tablespoons
  • Cheese (any hard cheese to grate, to suit your taste) – about 200 grams
  • Table salt – 2 teaspoons for minced meat and 1-1.5 teaspoons for vegetables
  • Ground black pepper - to taste
  • Fresh greens (dill, parsley, maybe other greens you like, for example green onions or cilantro) – only about 50-60 grams
  • Garlic (optional, we usually add) – 3-4 large cloves
  • Margarine or butter to grease the pan - a little, 10-15 grams

Preparation:

Peel the onions, finely chop and add to the minced meat. Add salt, pepper and mix everything thoroughly until smooth.

Wash the tomatoes, wipe them, cut them into small cubes (we focus on 1-1.5 cm).

Wash the sweet pepper, wipe it, remove the seeds, cut into small cubes.

Wash the fresh herbs, dry them, chop them finely and mix all the types of herbs you used.

Peel the garlic and cut into thin slices across the cloves.

Wash the potatoes, peel and grate on a coarse grater.

Grate the cheese on a coarse grater.

Place the minced meat mixed with onions in a baking dish greased with margarine or butter. The layer of minced meat should be leveled and lightly pressed with a spoon.

Place finely chopped tomatoes in even layers on top of the minced meat. sweet pepper and greens. Add a little salt and pepper (shake the salt and pepper shaker several times evenly over the entire surface of the mold).

Place a layer of grated potatoes in the mold, level it, press it down a little with a spoon, and sprinkle chopped garlic on it. Add more salt to the potato layer (about 1 teaspoon of salt) and a little pepper. Water evenly vegetable oil (watch our video recipe!).

Grease the casserole with sour cream.

Sprinkle grated cheese on top of the sour cream (during the baking process, the cheese will melt and form a crust that will prevent the casserole from drying out!).

Place the pan in the oven, preheated to 200-210 degrees (this is a medium or slightly above average heating level if you have an oven without a thermometer), on a baking sheet or on a wire rack, at medium height. Bake for about 45-50 minutes. Attention! Again and again we remind you that if you are using a glass baking dish, then place it in a cold oven and increase the time by about 10-15 minutes (this is how long it takes for your oven to warm up).
