Do you know what the main feature of this pie is? You can make it any height (I'll tell you how to properly bake one as tall as mine). It is clear that a pie with a diameter of 24 cm looks significant on a large table, but no one has canceled aesthetics and modern trends (narrower, but taller). Secondly, the pear pie turns out to be very meaty. Look at the huge piece I cut for myself for tea: it’s soft, literally melts in your mouth as soon as you take a bite, but it’s pleasantly dense, weighty in your hand, and at first you refuse to believe that this brick is so tender and juicy. The aroma of cinnamon and pears drives you crazy, and the crunchy nuts and salty straws (which also enhance the taste of the pear) are confusing - it seems like I’ve just bitten off something soft, but now something pleasantly crunches, and even a nutty smell appears - this is real bliss. Prepare immediately, eat immediately with black mint tea, you can add a scoop of ice cream, but I think this is too aesthetic! We're making killer pumpkin soup on Monday, get the orange ones ready!

Let's start by combining the dry ingredients in the bowl of a mixer. To do this, weigh flour (180 g), sugar (250 g, I would recommend taking white and cane 50/50), almond flour (50 g, you can make it yourself, or replace it with any other nut flour, or nuts chopped into dust) . There is also a teaspoon of cinnamon (you can omit it or replace it with nutmeg) and 1.5 tsp. baking powder.

Mix well with a whisk or mixer until smooth. In general, always pay attention to this point - if you do not have a very powerful mixer, mix the mass after introducing each new ingredient, always until smooth. This affects the quality of the dough, the structure of the future pie and its proper baking. We want to get a tasty and fluffy pie, right?

Bake in an oven preheated to 180 degrees for 25 to 50 minutes (depending on the diameter of the mold). If your pan is small, after about 15 minutes you will have to cover it with foil (mirror side up), otherwise the cake will burn before the dough is well baked.

Let the finished pie cool in the pan on a wire rack for about 5 minutes. Then remove it to prevent it from drying out.

In order for the dough to breathe and the cake to turn out tender and airy, you first need to sift the flour. To do this, pour it into a sieve and sift directly into an empty medium bowl. Add salt, baking powder and mix everything well with a tablespoon. Attention: You can pour all the ingredients into a sieve at once and sift them together.

Step 2: prepare the egg-sugar mixture.


Using a knife, break the eggshells and pour the whites and yolks into a deep bowl. Add sugar here too. Now, using a mixer or a hand whisk, beat everything until a fluffy, homogeneous mass is formed. Attention: If you use an electrical appliance, then be sure to use it at low speed so as not to splash the mixture in all directions.

Step 3: prepare the dough.


Gradually begin adding the flour mixture to the bowl with the egg-sugar mixture. At the same time, beat everything well with a whisk so that no lumps form in the dough. The consistency of the dough should be like thick sour cream.

Step 4: prepare the pear.


We rinse the pear under running water and place it on a cutting board. Using a knife, peel the fruit and then cut it lengthwise into two halves.

Remove the core and now chop the pear into small square pieces. Attention: in fact, the pear can be cut into pieces of any shape. These can be slices or circles. The main thing is that you like the baked goods.

Step 5: prepare the “Pear Paradise” pie.


Grease the baking dish well with margarine or butter, not forgetting the sides of the container. After this, place pieces of pear all over the bottom of the mold and fill them with dough. Place in the oven, preheated to temperature 180°-200°С, and bake the pie for 25-30 minutes until a golden brown crust appears on the baking surface. Ingredients

  • 3 pears
