How to make a juicy chicken breast omelette

Ingredients:

Egg - 4 pcs.
Chicken breast - 1 pc.
Shallot - 1 pc.
Milk - 3 tbsp. for the omelette

Butter - 40 gr.
Black pepper - to taste
Salt - to taste

Cooking:

Let's prepare the breast first. Chicken breast can be fresh or frozen. If you are using frozen breast, do not thaw it. Cook it the same way you would fresh. In this case, only the duration of poaching will change.

I boil or rather expand several breasts at once. Today I use one for an omelette, and after cooling completely, I will put the rest in a plastic container and send it to the refrigerator. There they can be safely stored for 3-4 days. In the coming days, I use them in any salad or soup.

So, in order for the chicken breast to remain juicy, I do not boil it, but expand it in a small amount of fat milk. To do this, pour enough milk into a fairly deep frying pan so that it rises to half the thickness of the chicken breast. Cover the pan with a lid and put on a slow fire.

Carefully! Milk boils pretty quickly and, under the lid, will definitely want to “break out”! Follow this moment. As soon as the milk begins to boil, reduce the heat even more and leave the breasts to simmer slowly for 10 minutes (15 minutes for frozen ones). Then open the lid, turn the breasts over, close and leave to simmer for another 10 minutes (15 minutes for frozen).

Cool the finished breasts without removing from the pan, under the lid.

Rinse the greens well under cold water and dry with a paper or canvas table towel, finely chop along with the onion.

Mix eggs with 3 tablespoons of milk and salt.

Beat eggs with milk, then add chopped greens, stir.

Cut the breast into small lengthwise pieces.

In order for the omelette to succeed, it is best to fry it in a non-stick pan. I use my pancake pan for this, with low sides. It is also very convenient for folding an already prepared omelette in half.

Saute the onion in butter (20 grams) until transparent, over low heat.

As soon as the onion has become soft and transparent, add chicken pieces to it and heat for 1 minute over low heat, stirring occasionally. Now meat and onions can be salted and sprinkled with freshly ground black pepper.

Put the HOT onions and chicken meat into a bowl with beaten eggs. We stir. Wipe the pan dry with a paper towel. We put on the slowest fire, put the butter (20 grams). As soon as the butter has melted, put the beaten eggs into the pan, mixed with onions and chicken meat.

Attention! Do not turn up the heat! Let the fire remain the smallest.
As soon as the edges of the omelette begin to "grab", use a fork to move the seized edges to the center and allow more liquid omelet from the center of the pan to spread around the edges.

Do not leave the omelet in the pan until golden brown. A real juicy omelette should be light, not fried.

As soon as the omelette mass has seized and ceased to be too liquid (in the very center it can even be left a little liquid), the omelet can be laid out on a warm serving dish. A serving dish can be warmed up by pouring hot water into it for a few minutes (while the omelet is frying). Then pour out the water and wipe the dish dry.

How to put the finished omelet on the dish? Let the omelet gently slide from the pan onto the dish, but only halfway (the other half is still in the pan) and then, just as gently and carefully, tilt the pan so that the second half covers the first. That's all! Serve omelet with chicken sprinkled with fresh herbs.
